Flores is one of Indonesia's most exciting emerging specialty origins, centered around the Bajawa highlands near the active Inerie and Kelimutu volcanoes in East Nusa Tenggara province. Unlike Sumatra, most Flores coffee is fully washed or semi-washed, producing a cleaner, brighter profile that has surprised specialty buyers accustomed to earthy Indonesian coffees. Flores Bajawa coffees offer a sweet, medium-bodied cup with notes of dark chocolate, brown sugar, earthy spice, and a distinctive savory herbal quality. The island's small-scale Ngada community farmers cultivate coffee under diverse shade canopy on steep volcanic hillsides. Flores has gained a dedicated following among roasters seeking an Indonesian origin that bridges the gap between Sumatran earthiness and Javanese refinement.
