Natural Process

A dry processing method where whole coffee cherries are dried intact on raised beds or patios, allowing the fruit to ferment around the seed. Natural processing produces fruity, wine-like, and full-bodied cups.

Mendalam

Natural processing is the oldest method, originating in Ethiopia and still dominant in Brazil and parts of East Africa. Cherries must be turned regularly during 2-4 weeks of drying to prevent mold and uneven fermentation. When executed well, naturals exhibit intense blueberry, strawberry, or tropical fruit notes; when poorly managed, they develop ferment, vinegar, or compost off-flavors. The method uses minimal water, making it suitable for arid regions.
