Pacamara is a cross between Pacas and Maragogipe, created at the Salvadoran Institute for Coffee Research (ISIC) in 1958. Combining Pacas' compact stature with Maragogipe's large bean size, Pacamara has become one of the most celebrated competition varieties. It produces exceptionally complex cups with floral and herbal aromatics, bright citric acidity, creamy body, and flavors of tropical fruit and chocolate.
