Coffee Cherry

The fruit of the coffee plant, containing the coffee seeds (beans) surrounded by skin, pulp, mucilage, parchment, and silver skin layers. Ripe cherries are typically bright red or yellow depending on the variety.

A coffee cherry takes 7-11 months to mature after flowering, depending on species and altitude. Each cherry usually contains two flat-sided seeds facing each other, though peaberries form as single round seeds. The outer skin (exocarp) and pulp (mesocarp) are removed during processing. Cascara, the dried skin and pulp, is increasingly sold as a tea-like beverage or food ingredient with its own caffeine content and flavor profile.
