Bloom

The initial wetting phase of brewing where hot water releases trapped carbon dioxide from freshly roasted coffee grounds. A vigorous bloom indicates fresh coffee and ensures even extraction.

During the bloom, CO2 escaping from the grounds creates a visible bubbling and swelling of the coffee bed. If this gas is not released before full brewing begins, it can repel water and cause channeling, leading to uneven extraction. Most pour-over and drip protocols call for a 30-45 second bloom with roughly twice the coffee's weight in water.
