Jinotega is Nicaragua's largest and most important coffee-producing department, often called the 'breadbasket of Nicaraguan coffee.' The department's highlands benefit from Caribbean moisture and volcanic soils, creating conditions that produce coffees of remarkable quality relative to their price point. Jinotega coffees offer a balanced, sweet cup with medium body, mild acidity, and flavors of brown sugar, chocolate, and soft citrus. The region has experienced significant specialty development, with farms like Finca La Hammonia and cooperatives like Aldea Global producing competition-quality lots.
