Silver Skin
The thin, papery spermoderm directly adhering to the coffee bean surface, often visible as chaff that separates during roasting. Silver skin is the innermost layer of the coffee fruit anatomy.

During roasting, heat causes the silver skin to detach and become chaff, which is collected by the roaster's exhaust system. Excessive silver skin retention on green beans can indicate immature picking or inadequate processing. In some natural and honey processed coffees, residual silver skin carries sugars and flavors from the mucilage into the roast. Silver skin is increasingly studied for its antioxidant content and potential as a dietary fiber supplement.
