Clean Cup
A cupping attribute that evaluates the absence of defective or distracting flavors from first sip to finish. A clean cup allows the coffee's positive attributes — acidity, sweetness, and flavor — to present without interference.

Clean cup is scored from 0 to 2 for each of five cups in a cupping set. Any noticeable off-flavor — ferment, phenol, Rio, earthy, baggy, or musty taints — results in a deduction. Washed coffees generally score higher on clean cup than naturals because the removal of fruit during processing reduces the risk of uncontrolled fermentation. A perfect clean cup score (10 points across 5 cups) is expected for any coffee aiming above 85 in total.
