Pulped Natural
A Brazilian processing innovation where the cherry skin is mechanically removed but the full mucilage layer is left on during drying. Pulped natural sits between washed and natural, producing sweet, low-acid cups with moderate body.

Also called semi-washed in some regions, pulped natural processing skips the fermentation tank entirely. After depulping, beans go directly to drying patios or mechanical dryers with their mucilage intact. The method was developed in Brazil in the 1990s to improve consistency over traditional naturals while maintaining sweetness. It requires less water than full washing and produces the chocolatey, nutty profiles that define many Brazilian specialty lots.
