Altitude
The elevation above sea level at which coffee is grown, typically measured in meters above sea level (masl). Higher altitudes produce denser, harder beans with more complex acidity due to slower cherry maturation.
Vertieft
Coffee grown above 1,400 masl is generally classified as Strictly Hard Bean (SHB) or Strictly High Grown (SHG), grades that command premium prices. At higher elevations, cooler nighttime temperatures slow sugar metabolism, allowing more organic acids and complex sugars to accumulate in the seed. This density and chemical complexity translate into bright acidity and nuanced flavor when properly roasted. Lowland coffees (below 900 masl) tend toward neutral or earthy profiles with less perceived sweetness.
