Cold brew is made by steeping coarsely ground coffee in cold or room-temperature water for an extended period, typically 12-24 hours. The slow extraction without heat produces a smooth, naturally sweet concentrate with very low acidity. Cold brew has surged in popularity as a refreshing alternative to hot coffee, and the concentrate can be diluted with water or milk, served over ice, or used as a base for coffee cocktails.
