The Hybrid Concept

Pour over requires pouring skill. French press produces sediment. What if you could steep like a French press and filter like a pour over? That is exactly what hybrid or "steep-and-release" brewers do.

The Clever Dripper is the best-known hybrid device. It looks like a standard cone dripper with a flat bottom and a paper filter, but it includes a shut-off valve at the base. When sitting on the counter, the valve is closed — coffee and water steep together as a full immersion. When you place the Clever on a cup or carafe, the valve opens and the brewed coffee drains through the paper filter.

The Hario Switch applies the same concept to the V60 form factor, adding a glass ball valve to the base of a standard V60 cone. The December Dripper offers adjustable flow control with multiple settings between fully closed and fully open.

Why Hybrids Work

Immersion brewing is inherently more forgiving than percolation (pour over) because every particle of coffee contacts the same water for the same duration. There is no channeling, no dry spots, and no dependence on pouring technique. The paper filter then removes the oils and sediment that immersion methods like French press leave behind. You get the best of both worlds.

Step-by-Step

  1. Place the filter in the Clever Dripper and rinse with hot water. Discard the rinse (the valve opens when on a cup, so rinse over a sink or mug).

  2. Add coffee. Set the Clever on the counter (valve closed). Add 20 g of medium-ground coffee.

  3. Pour water. Add all 300 g of water at once. No special pouring technique needed — just wet all the grounds. Give one gentle stir to ensure full saturation.

  4. Place the lid and start the timer. The lid reduces heat loss.

  5. Steep for 2:00-3:00. The coffee extracts in the closed chamber. No additional intervention needed.

  6. Release. Place the Clever Dripper on your cup or carafe. The valve opens and the coffee drains through the paper filter. Drain time is typically 60-90 seconds.

  7. Remove and serve. Lift the Clever off the cup when draining is complete. Discard the filter and grounds.

Adjusting the Brew

  • Stronger cup — increase coffee to 22 g or extend steep time to 3:30
  • Lighter cup — reduce coffee to 18 g or shorten steep time to 1:30
  • More body — grind slightly finer (medium-fine); this also slows drain time
  • More clarity — grind coarser (medium-coarse); drains faster with less fines

Hario Switch

The Hario Switch uses a standard V60 cone and V60 paper filters, with an added glass ball valve. When the valve is closed, it is an immersion brewer. When open, it is a standard V60.

This versatility allows advanced techniques: steep for 2 minutes with the valve closed (immersion phase), then open the valve and let the bed drain as a percolation phase. The combination produces a cup with more body than a pure V60 but more clarity than a pure immersion brew.

The steep-and-release method eliminates the most common beginner mistakes:

Cleaning and Durability

The Clever Dripper is made of BPA-free Tritan plastic and is virtually indestructible. After each use, remove the filter, rinse the dripper, and let it air dry. The valve mechanism should be cleaned weekly by running hot water through it while opening and closing the valve several times. Replace the silicone seal if the valve begins to leak.
