Pacas is a natural dwarf mutation of Bourbon discovered in 1949 on the Pacas family farm in Santa Ana, El Salvador. Similar in stature to Caturra but adapted to Central American conditions, Pacas is wind-resistant and performs well at medium-to-high altitudes. It produces a sweet, well-balanced cup with good body, mild acidity, and notes of chocolate and dried fruit.
