Cobán is a unique Guatemalan origin in the Alta Verapaz department, characterized by near-constant cloud cover, mist, and rainfall that create a distinctly different growing environment from Guatemala's drier regions. The persistent humidity and cool temperatures produce a slow cherry maturation cycle that develops deep, nuanced flavors. Cobán coffees are known for their balanced, rounded profile with mild acidity, medium body, and notes of dried fruit, chocolate, and subtle spice. The region's karst limestone geology creates naturally filtered water systems and mineral-rich soils. Cobán's climatic conditions make it particularly suitable for natural and honey processing, which complement its inherently sweet profile.
