Where Spice Meets Coffee

Morocco sits at the crossroads of African, Arab, and European cultures, and its coffee tradition reflects all three. Moroccan coffee is characteristically spiced — cinnamon, cardamom, ginger, black pepper, nutmeg, and cloves transform a cup into a fragrant, warming experience.

Mint tea is Morocco's national beverage. Coffee occupies a secondary but growing position, drawing from French colonial influence (espresso drinks) and Middle Eastern tradition (spiced, strong, ceremonial).

The Spice Tradition

Spices are ground fresh and added to coffee grounds before brewing, or simmered in water first.

Traditional cafes are typically male-dominated spaces with marble tables and simple furnishings. Rooftop terraces offer medina views. Modern cafes in Casablanca and Rabat attract younger, mixed-gender clientele.

Regional Differences

Marrakech: Most touristic — spiced coffee commonly offered to visitors. Casablanca: More European-influenced. Fes: Traditional cafes in the oldest medina. Tangier: Legendary literary cafe scene — Cafe Hafa has hosted writers for decades.

Making It at Home

Mix 1/2 teaspoon cinnamon, 1/4 teaspoon cardamom, 1/4 teaspoon ginger, and pinches of black pepper and nutmeg with 4 tablespoons ground coffee. Brew using any method, add sugar to taste, serve in small glasses. The aroma alone is worth the effort.
