Microclimate
A localized set of atmospheric conditions—temperature, humidity, wind, and sunlight—that differs from the surrounding area. Microclimates within a single farm can produce noticeably different cup profiles.

A hillside's north-facing slope may receive less direct sun than its south-facing counterpart, resulting in slower ripening and different flavor development even within the same lot. Valley floors accumulate cold air at night, creating wider diurnal temperature swings that promote sugar concentration. Progressive producers separate harvests by microclimate zone and process them as distinct micro-lots, allowing buyers to select specific flavor characteristics. This granularity is a hallmark of the specialty coffee movement.
