Medium roasts reach the end of first crack and begin approaching (but do not reach) second crack, at 210-220°C. The bean color is uniform medium brown with a dry-to-slightly-oily surface. Maillard reaction and caramelization are well-developed, creating a balanced cup where origin flavors and roast flavors harmonize. This is the most commercially popular roast level worldwide and the standard for many drip coffee drinkers. Medium roast retains moderate caffeine content — contrary to popular belief, the difference between roast levels is negligible.
