Dose is the first variable set when building an espresso recipe; yield and grind size are then adjusted relative to it. Increasing the dose without changing the basket can compress the puck excessively, restricting flow and extending shot time. Decreasing it leaves headspace that allows water to pool above the puck, promoting uneven extraction. Precision baskets are rated for specific dose ranges (e.g., 18–21 g for a VST 20 g basket).
