Cajamarca is Peru's leading specialty coffee region, located in the northern Andes where the Marañón and Utcubamba river valleys create protected microclimates ideal for Arabica cultivation. The region's high elevations and Andean terroir produce coffees with bright, clean acidity and delicate sweetness. Cajamarca coffees are known for their medium body, floral aromatics, and flavor notes of milk chocolate, brown sugar, and subtle citrus. The area's predominantly organic farming practices — often by default due to limited access to agrochemicals — appeal to sustainability-focused buyers. Cajamarca's Jaén and San Ignacio provinces have emerged as Peru's most awarded coffee-producing areas in national and international competitions.
