The Vietnamese Phin is a small metal single-cup drip filter that sits atop a cup, slowly dripping concentrated coffee through a perforated press plate. Vietnamese coffee culture traditionally uses dark-roasted Robusta, brewed strong and served over sweetened condensed milk (ca phe sua) or over ice (ca phe sua da). The Phin's simple design and slow drip rate produce a bold, intensely flavored brew that balances the sweetness of condensed milk.
