The siphon (or vacuum) brewer is a theatrical full-immersion method that uses vapor pressure and vacuum to brew coffee between two glass chambers. Invented in the 1830s, it produces an exceptionally clean and aromatic cup. Water is heated in the lower chamber, rises to the upper chamber where it steeps with coffee grounds, then filters back down as the heat source is removed. The siphon rewards careful technique with remarkable clarity of flavor.
