Green Coffee
Unroasted coffee beans that have been processed, dried, hulled, and sorted but not yet subjected to heat transformation. Green coffee is the form in which coffee is traded, shipped, and stored globally.

Green coffee has a grassy, hay-like aroma and contains the precursor compounds — sugars, amino acids, chlorogenic acids — that generate flavor during roasting. Properly stored in GrainPro or Ecotact bags at stable humidity (50-60%) and temperature (20-25C), green coffee can maintain quality for 12-18 months. Water activity below 0.60 aw is the key metric for shelf stability.
