The distinct flavor profile attributable to a coffee plant's genetic variety, independent of terroir or processing. For example, Gesha is known for jasmine and bergamot notes, while SL28 is recognized for blackcurrant acidity.

Varietal character is the genetic contribution to cup quality, analogous to how Pinot Noir and Cabernet Sauvignon grapes produce fundamentally different wines regardless of where they are grown. In coffee, varieties like Bourbon, Typica, Caturra, and Gesha each have inherent chemical precursor profiles that roasting and brewing reveal. Identifying varietal character requires tasting the same variety from multiple origins or comparing different varieties from the same farm under identical processing, isolating genetics from environment.
