The term was coined by Trish Rothgeb in 2002 to describe the post-Starbucks evolution where coffee joins wine and craft beer as a product of provenance and process. Third wave values include direct farmer relationships, seasonal offerings, meticulous brewing parameters, and cupping-score transparency. Iconic third wave roasters—Intelligentsia, Counter Culture, Stumptown—pioneered direct trade, latte art competitions, and single-origin espresso in the early 2000s. The movement has since become mainstream in urban specialty cafes worldwide, influencing even commercial roasters to adopt lighter profiles and origin storytelling.
